Linda’s Znoodle Salad
A kid-friendly, gluten-free alternative to pasta, znoodle salad is worth the try.
(Serves 4)
Znoodle Salad Ingredients
- 2 small to medium green zucchini
- 1 small to medium yellow zucchini/summer squash
- 1 avocado
- Juice of 1 lemon
- Small red onion
- 1 mango, diced
- 1 bunch fresh cilantro, chopped
- Pinch of salt
Directions
Prepare your zucchini noodles first. Start by washing your zucchini (leaving the skin on). Use a Veggetti, veggie spiralizer or peeler to form zucchini noodles. Set aside noodles in a bowl. Chop the rest of your ingredients. Squeeze the lemon juice with a pinch of salt. Toss well. Don’t throw away the zucchini bits. Instead add to salad/soup or give the kids as healthy snack.
