Honey-Herb Chicken

Who doesn’t like a simple and quick recipe that tastes great? This recipe has just four ingredients. You could double the sauce and set it aside to pour on after cooking.

(Serves 4)

Honey-Herb Chicken Ingredients

  • 4 boneless, skinless chicken breast halves (about 1 pound)
  • Juice of 1 lime (about 2 T)
  • 1 to 2 T fresh coriander, chopped
  • 1 T honey

Directions

With a meat tenderizer, pound each breast half to about 1/2-inch thick. Combine lime juice, coriander and honey in a small bowl. Brush chicken breasts with glaze. Brush grill lightly with olive oil. Grill (or broil) chicken for approximately 5 minutes on each side or until chicken reaches an internal temperature of 165 F. It can be served hot immediately or refrigerated for sandwiches or salads later.
