Slow Roasted Chicken

(Serves 8)

1 (3-4 lb.) whole chicken
3 t kosher salt
2 t paprika (you could mix regular, smoked and hot paprika)
1 t onion powder
1 t ground thyme
1 t black pepper
½ t garlic powder
1 medium onion, chopped
In a small bowl, mix all the spices. Rub spice mixture onto the chicken. Place onion on the bottom of the slow cooker. Place chicken on top of the onion. Cook on low for 9 hours. Remove chicken to a cutting board. Serve.

    Simple. Slow roasted. But I’m curious what makes it worthy of being labeled a healthy meal?

      We had our dietitians evaluate each of the recipes for nutrition. I just added the nutritional information to the post. Taking the skin off is also a healthier option. Enjoy.
