You may have heard that the more colorful your plate, the better, but this white vegetable has benefits all around. Because of how versatile it is, you can use it to replace grains and legumes in your diet with just a little extra prep work. Here’s why you need to add cauliflower to your grocery list.

Benefits of Cauliflower

Antioxidants – Did you know one cup of raw cauliflower contains 52 milligrams of vitamin C? In comparison, a medium orange contains about 64 milligrams. Vitamin C is an antioxidant that promotes both skin and brain health. Cauliflower also contains glucosinolates that help activate the body’s detoxification system, which researchers say may play a role in preventing some types of cancer.

Fiber – There are about three grams of fiber in one cup of cauliflower. This means you’re 10 percent closer to meeting your recommended daily intake. Fiber helps food pass through your digestive system and absorb vital nutrients.

Weight loss – Cauliflower is low in calorie, containing only 25 calories per cup, so you can eat a lot without worrying about the scale. Since cauliflower is full of fiber, it promotes a feeling of fullness, making you eat less throughout the day.

Cauliflower Pizza – Use a food processor to make the dough. Microwave until soft, drain as much water as possible, and press cauliflower into baking sheet. Cook until brown. Then top with your favorite pizza toppings!

Cauliflower Mash – Remove a starch from your plate by steaming cauliflower until tender and mashing in a food processor. Season and eat up!

      I tried Buffalo Cauliflower at the Hard Rock Cafe (new item in menu). I was surprised how delicious it was.
      Will now make it at home.
