Tuscan Salad

11-Tuscan SaladA colorful salad to accompany your holiday meal. This Simply Salad contest winning dish was submitted by Gina Halbedel, Ambulatory Services, UMass Memorial Medical Center, Worcester, MA

(Serves 4)
1 each red, yellow and orange bell peppers, sliced
½ c. red wine vinegar
½ c. baby portobello mushrooms, sliced
4 c. raw spinach
1 large red onion, cut into rings
5 grape tomatoes, halved
1 c. mozzarella cheese, shredded
2.5 oz. farfalle, cooked and chilled
12 oz. roasted chicken breast (shredded)

Toss all ingredients together and enjoy.

    There is bow-tie pasta in the picture, yet none in the ingredients. Is there no oil at all?-just vinegar?

      Thanks for you question. It calls for 2.5 oz. farfalle, cooked and chilled – that’s the pasta. No oil.

      That’s what 2.5 oz. farfalle, cooked and chilled is. Just the fancy name for bow-tie pasta
