Super Simple Tomato Salad

Super Simple Tomato SaladA great recipe for the tomatoes just coming off the vine. This Simply Salad contest winning dish was submitted by Debby Bernier, UMass Memorial Medical Center, Worcester, MA.

(Serves 4)
20 grape or cherry tomatoes, cut in half
Olives of your choice, amount based on your liking
8 oz. fresh mozzarella cheese balls
½ c. onions of your choice or scallions, chopped
¼ c. fresh parsley or Italian seasoning, if desired
1/2 c. olive oil
1/8 c. balsamic vinegar

Mix all ingredients in a bowl. This is a recipe to have fun with and make your own according to your tastes. Optional: Replace oil and vinegar with Italian dressing.

    This looks delicious!
    Curious as to what makes this joint friendly?
    I have been told by my MD that nightshade plants contribute to joint stiffness.
    And arthritis.org suggests a dairy-free diet to reduce inflammation.
    Please advise. Thanks.

      We apologize for the confusion. This post was added to the newsletter as more of a fall/seasonal recipe vs. one that is “joint friendly.” The title should have reflected that.

    Looks delicious and healthy but the raw tomatoes should be heated (cooked) in order for Lycopene to be released. Off the vine tomatoes sure taste good but, cooked with olive oil, they are healthier.
