Give Your Kale a Rubdown
Break out the scented candles, turn on some Barry White, and get ready to massage your kale. Kale is a nutritious green vegetable rich in vitamins A, C, and K, as well as calcium and iron. But if you’re going to eat it raw, say in a salad, you may enjoy it more if it’s given a good rubdown.
Wondering where to begin?
First, rip out the stems and save them for a smoothie. Tear the leaves into bite-size pieces, then wash and dry them with a salad spinner. Place kale in a large bowl and pour on dressing, such as a vinaigrette. Another great option is lemon juice mixed with extra virgin olive oil and garlic. With your hands, rub the dressing into the kale until all the leaves are fully coated. Let this mixture marinate for 15 to 30 minutes, so the kale leaves have time to soften and reduce by half.

Massaged Kale Salad with Grilled Lemon Garlic Chicken
Ingredients
Chicken:
- 2 boneless, skinless chicken breasts
- 1 T minced garlic
- 1 T olive oil
- Juice from 1 lemon
- 3 T scallions
- 1/4 t black pepper
- 1/5 t kosher salt
- Chicken: Filet chicken breasts. Combine olive oil, garlic, lemon juice, scallion, salt and pepper. Whisk together. Pour over chicken and marinate for 30 minutes to two hours. Grill on medium heat until cooked through.
Salad:
- 2 bunches of kale
- 1/3 cup olive oil
- 1/4 cup lemon juice
- 1/2 cup freshly grated Parmesan cheese, plus extra for garnish
- 1 T minced garlic
- 1 T soy sauce
- 1/4 t black pepper
- 1/2 t salt
Directions
Wash kale and pat dry. Remove leafs from stems, tear into smaller pieces, and add to salad bowl. Add remaining ingredients to the bowl with the kale. Using your hands, massage all of the ingredients together until the kale reduces by half and becomes vibrant green. Top with grilled chicken and garnish with grated Parmesan. Serves 4
